We are now in our 3rd year of collaboration with Ingrid. 

PRICE PAID DIRECTLY TO INGRID
Thanks to all of you, we were once again able to buy all of her specialty coffee production, as well as pay her 28% more for her coffee than last year.

We paid Ingrid directly and without intermediaries $3.65USD/lbs for her coffee.
To put this price into context, a coffee farmer in El Salvador would need to receive a minimum of $2.22USD/lbs to support himself and his family.
While the regional cooperative would have paid $1.66USD/lbs for its coffee, FairTrade would have offered him between $1.40USD/lbs and 1.70USD/lbs .

Thus, the only valid solution for Ingrid is to sell us her coffee at the price she deems necessary to ensure the sustainability of her operations.

HARVEST 2021
This year was far from easy for Ingrid.
In addition to having lost his father in the middle of the year, the pandemic has added its share of complexity in the production and export of his coffee.

Labor shortages in North American ports and warehouses meant that shipping companies were constantly canceling trips to the United States and Canada.
We were even uncertain whether we could export Ingrid's coffee, which would have been catastrophic.
But luckily, Ingrid's coffee finally left El Salvador more than 3 months late.

FIRST BATCH OF HONEY PROCESS
Despite all this nightmare, Ingrid showed incredible resilience.
She thus offers us her very first production of the Honey process .
Once again, we are amazed at the quality they offer us, despite the fact that they are only in their third year of producing specialty coffee.

Thanks to the meticulous picking of the coffee cherries, the addition of a "floater" type sorting (which involves depositing all the picked cherries in a basin of water and pulling out the cherries that float on the surface, since less dense and therefore undesirable), and a controlled and prolonged drying of more than 20 days, Ingrid offers us a perfectly balanced, complex and flawless coffee.
