VARIETY
Maragogype, also known as Elephant Bean, is considered one of the biggest strains currently grown worldwide. When produced at a minimum altitude of 1500m and in volcanic soil, characterizing Finca Himalaya, Maragogype offers an exceptional cup.
Added to the natural drying process, this batch of Mauricio gives us a coffee with a lot of body, a silky texture, as well as notes of grapes, hibiscus and chocolate.
DRYING PROCESS
To ensure exceptional quality, Mauricio has picked the Maragogype cherries only when they have reached full maturity, when they turn purple. Then, by bathing them in a basin of water, he removes those that float, considered to be less dense and thus able to bring undesirable flavors to the coffee.
And finally, he places the coffee cherries on what is called an “African bed” which is made up of a raised mesh, for the uniform and slow drying of the cherries.
Mauricio will dry them for an average of 24 days in the sun, making sure to move them every 30 minutes during the day and cover them at night.
